Banana Pancakes


What is better than a fluffy stack of pancakes?! My favorite breakfast at the moment is blueberry banana flax seed pancakes! I make a large batch on Sunday as these freeze well to grab-n-go during the week!

Cooking doesn’t have to be complicated, nor does it always have to be completely from scratch to be nutritious. I love using Kodiak Cakes® power cakes mix for my pancakes because it contains quality ingredients and is high in protein to keep you fueled throughout the morning! I add flax seed for additional omega-3’s and blueberries/bananas for a hidden serving of fruit!

Recipe (serves 2):

1 cup Kodiak Cakes® buttermilk mix

1 ripe banana

1/4 tsp Saigon cinnamon

1 tbsp Bob’s Red Mill® ground flax seed

1 cup milk

1 egg

1/2 cup blueberries

Directions: mix all ingredients together (except blueberries) until well combined. Gently fold blueberries into batter. Follow instructions for cooking on Kodiak Cakes® box! These bad boys clock in at 375kcal and 24g protein per serving. Enjoy!
