Looking for a quick snack idea? I’ve got you covered with these chocolate chip energy bites. I recently gave a nutrition talk for Girls on the Run Philadelphia and shared this recipe with them. Not only are they great as fuel for a race, they also make a good sub for that chocolate chip cookie craving!
These bites are made with all natural ingredients including cashews and dates. Both are excellent sources of potassium and cashews have magnesium, which help with muscle function. Check out the recipe below!
Ingredients:
2 cups roasted cashews
1.5 cups pitted medjool dates
1 tsp vanilla extract
1 tbsp maple syrup
1/2 cup dark chocolate chips
Sea salt, optional
Directions: blend cashews and dates in high powered blender until smooth. Add in vanilla, maple syrup, and chocolate chips, pulsing about 10 times until combined. Remove dough and refrigerate for 30 minutes. Form into 1-inch round balls. Store in the fridge for up to five days or the freezer for 3 months. Enjoy!
