Pumpkin Bars

Fall has finally arrived in Philly! It’s actually a little cooler than normal for this time of year, which means I am back in the kitchen whipping up some of my favorite baked treats.  I tend not to bake much in the summer as the house gets too hot with the oven on.  One of my favorite Fall treats are these pumpkin blender bars. They are made with a secret ingredient (beans!) instead of flour.  They are extremely versatile and can be eaten as a healthy breakfast or snack.  I enjoy mine at night while watching TV or reading a book.  Check out the recipe:

Ingredients:

  • 1 cup oats
  • 1 cup pumpkin puree
  • 1 (15oz) can garbanzo beans, rinsed and drained
  • 1 (15oz) can cannellini beans, rinsed and drained
  • ½ tsp baking soda
  • ½ tsp baking powder
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ½ cup maple syrup
  • ½ cup cashew butter
  • 1 large egg
  • ½ cup dark chocolate chips

Directions: Preheat oven to 350°F.  Add oats to high speed blender, pulsing until they reach a flour-like texture.  Pour in beans and pumpkin puree, blending on high until smooth. Add in the next 7 ingredients, blending for 1 minute until combined.  Remove lid from blender and stir in chocolate chips. Line a 15 inch jelly-roll pan with parchment paper and cover with non-stick spray of choice.  Spread batter evenly onto pan. Place in oven and bake for approximately 20 minutes or until toothpick comes out clean. Enjoy!
