Chocolate protein muffins with peanut butter and chocolate drizzle are my go-to dessert at the moment. Let’s be real, I love anything with chocolate. Dessert isn’t dessert unless there is chocolate involved. I am always finding ways to sneak it into my day without adding in a ton of sugar or processed foods. These chocolate protein muffins are the perfect solution.
Recipe:
- 2 cups Kodiak Cakes® chocolate protein flapjack mix
- 1 cup milk of choice (I use Fairlife® for the protein/low sugar)
- 1 large egg
- 3 tablespoons cacao powder
- 2 scoops Further Food® collagen peptides
- 1/2 cup pumpkin puree
- 1/4 cup maple syrup
- 1 tsp pure vanilla extract
Directions: Preheat oven to 350F. Spray 12-cup muffin tin with nonstick spray of choice. In a large bowl, mix together Kodiak Cakes® mix, collagen, and cacao. Add in milk, pumpkin puree, and maple syrup, whisking until combined. Add egg and vanilla, continuing to whisk until blended. Divide batter evenly into the muffin cups and bake for approximately 18 minutes or until toothpick comes out clean. Top with peanut butter or melted dark chocolate for added flavor! Enjoy.
