Ingredients:
- 10 large eggs
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 cup zucchini, cut in 1/4 inch rounds
- 1 small yellow onion, diced
- 4oz herbed goat cheese
- Olive oil, salt, pepper
Directions: Preheat oven to 400F. In a large cast iron skillet (or any oven proof skillet), heat olive oil over medium heat. Add in onions and saute until translucent. Add in remaining veggies, sprinkle with salt and pepper, and continue to cook for 10 minutes until soft. Meanwhile, crack eggs into a small bowl and whisk until lightly beaten. Pour eggs into pan with cooked veggies. Crumble goat cheese over top of eggs. Place in the oven and cook for approximately 20 minutes until eggs are set. Enjoy!
