- 1 large portobello mushroom cap
- ¼ cup tomato sauce
- 2 tbsp. mozzarella cheese
- Handful of fresh spinach
- Pinch of crushed red pepper
Directions: Heat oven to 400°F. Spray a baking sheet with nonstick spray (or line with parchment paper). Place mushroom cap upside down on pan. Top with tomato sauce, followed by spinach and cheese. Sprinkle with crushed red pepper. Place in the oven and bake for 15 minutes until cheese is melted. Enjoy!
