The day after Thanksgiving presents endless opportunities to re-purpose your leftovers without feeling like you are eating the same meal over and over again. I have you covered for breakfast with a super simple pumpkin pie parfait. I took my healthier pumpkin pie (see previous blog post on pies/sides) and layered it with skyr to make a delicious parfait. Using the skyr made this higher in protein, while still satisfying my leftover cravings.
Pumpkin Pie Parfait
- 1 slice pumpkin pie, crust removed
- 1 (5.3oz) container Siggis® vanilla skyr
- ¼ cup KIND® almond butter granola (or granola of choice)
Layer all ingredients as preferred. I started with half the pie, followed by the skyr and granola and kept going until I ran out. Enjoy for breakfast or as a delicious snack.
