Blueberry Vanilla Pancakes

Ingredients (serves 4):

Pancakes:

  • 2 cups Birch Benders protein pancake mix
  • 2 cups milk of choice
  • 1 tsp cinnamon
  • 1 large egg
  • 2 tbsp ground flax seed
  • 1 tsp vanilla extract
  • 1/2 cup blueberries

Blueberry Syrup:

  • 1 cup blueberries
  • 2 tbsp maple syrup

Directions:  Mix all pancake ingredients together, adding blueberries in last so they do not burst. Cook pancakes to package directions.  

In a small sauce pan, add 1 cup blueberries and maple syrup. Heat over medium heat, stirring occasionally, until blueberries soften and mixture thickens.  Serve over cooked pancakes and enjoy!  I like to add peanut butter and bananas to my toppings as well!
