Butternut squash and goat cheese pizza is my favorite topping all time. The sweetness of the butternut squash mixed with the savory, tangy cheese is the perfect combo. I am a huge fan of topping my pizza with vegetables, are you? I am also a huge fan of using ready-made items such as Caulipowered pizza crust to save time while still packing in quality nutrients.
This week has been a whirlwind! I started my new position and have been training from home. Everyone says to me “working from home is SO easy”. Newsflash- it isn’t really! While I will have more flexibility in my schedule, there is still a full days worth of work (maybe even more) to be completed each day. I did not meal prep this week thinking I would have time to make lunches and quickly learned that is not the case! Regardless, this is all so exciting and new- I love learning and it is great to be branching out from my normal routine!

1 Caulipowered plain pizza crust
1 small butternut squash cut into 1/2” cubes
½ cup baby bella mushrooms, diced
2 cups baby spinach
¼ yellow onion, diced
¼ tsp minced garlic
2oz plain goat cheese
¼ cup shredded sharp white cheddar (can sub mozzarella)
Salt/Pepper, to taste
Directions: Heat oven to 400°F. Line a baking sheet with parchment paper, placing cubed squash onto pan and drizzling with olive oil, salt, pepper. Bake in the oven for approximately 20 minutes until fork tender. While squash is cooking, heat olive oil in a skillet over medium-high heat, adding in onion and mushrooms. Cook for approximately 5-8 minutes until golden. Add in garlic and spinach, cooking until spinach is wilted down. Remove squash from oven and mix in with mushroom mixture. Pour mixture on top of pizza crust (you may have some additional leftover). Top with goat cheese and cheddar, placing in the oven for 12-15 minutes until crust edges are golden. Enjoy!
